Calling all math nerds & martini mavens—we’re sharing a recipe that’s 3.14 you to kick your Pi(e) Day celebrations up a notch (and if you don’t celebrate Pi(e) Day, don’t be a 3.14 bore & hop on the Pi(e) Day bandwagon!). 

Let’s spell (or count?) it out for you: we’ve taken a fresh baked favorite, swirled it with a happy hour staple, and ended up with the best dessert-meets-drink we’ve ever had the privilege to sip-sip. If you’re keeping count (as you should—it is PI Day after all), that’s 1 HuckleBlueberry Pie + 1 Martini= 1 delicious Pie-Tini. So if you’re looking for the perfect equation occasion to shake up (not stir) your happy hour, this is the pie-fect recipe for you.

What You’ll Need…

  • 4 ounces vodka
  • 1/2 of a vanilla bean
  • 2 finely crushed Safe+Fair Remy’s Grahams
  • Juice of 1/2 a lemon plus 1 1/2 ounces, chilled
  • 6 ounces fresh blueberries, chilled
  • 1 1/2 ounces simple syrup
  • Huckleblueberry Bubbles (to top)
  • Lemon wheels, for garnish

What You’ll Do…

  1. The night (or up to three nights) before you want to make your cocktails, make the vanilla vodka. Place the vodka and vanilla bean in a small mason jar or sealable container and place in the refrigerator for at least 12 hours.
  2. When making the cocktails, you’ll first need to prep the rims of your glasses. Pour the Safe+Fair Remy Graham crumbs onto one small round plate and squeeze the juice of ½ of a lemon onto another small round plate.
  3. Taking your martini glasses one at a time, dip the rims into the lemon juice first and then the graham cracker crumbs. Set aside while you make the martinis. 
  4. In a blender, combine the blueberries, 1 ½ ounces lemon juice, vanilla vodka and simple syrup. Pour evenly into the two martini glasses you’ve rimmed and top with Huckleblueberry Bubbles. Garnish with a lemon wheel, if desired.
